  American indian hopi blue corn mush "savory way"

 
Yield: 6 Servings
 
1 qt Water Salt      1 1/2 c Blue cornmeal
 Oil for frying Bring water to a boil in a saucepan add salt to taste and whisk in the cornmeal. Lower the heat and stir the cornmeal for 10 minutes or until it tastes done. The coarser the meal the longer it will take. Pour the cooked cereal onto a cookie sheet or into a bread pan and set it aside to cool for an hour or so or until firm. Once it has cooled slice it into pieces for frying. Fry the slices in butter or oil in a nonstick pan until lightly crisped on both sides. If this is to be eaten as a savory sprinkle a little red chili or paprika on top just before serving. This is cooked like cornmeal mush molded in a bread pan and then sliced and fried. It is delicious with a clear corn flavor and odd purple-blue color. It's good with eggs and bacon or with butter.

  Acorn bread

 
Yield: 1 Loaf
 
1 c Acorn meal      1 c Flour
2 tb Baking powder      1/2 ts Salt
3 tb Sugar      1 Egg beaten
1 c Milk      3 tb Oil
 Sift together acorn meal white flour baking powder salt and sugar. In separate bowl mix together egg milk and oil. Combine dry ingredients and liquid ingredients. Stir just enough to moisten dry ingredients. Pour into a greased pan and bake at 400F. for 30 minutes.

 Baked indian pudding

 
Yield: 8 Servings
 
1/2 c Cornmeal yellow      4 c Milk whole; hot
1/2 c Maple syrup      1/4 c Molasses light
2 Eggs; Slightly Beaten      2 tb Butter/Margarine; Melted
1/3 c Sugar brown; packed      1 ts Salt
1/4 ts Cinnamon      3/4 ts Ginger
1/2 c Milk
 whole; cold In top of double boiler slowly stir cornmeal into hot milk. Cook over boiling water stirring occasionally 20 minutes. Preheat oven to 300 F. Lightly grease 2-quart baking dish. (8 1/2" round) In small bowl combine rest of ingredients except cold milk; stir into cornmeal mixture; mix well. Turn into prepared dish; pour cold milk on top without stirring. Bake uncovered 2 hours or just until set but quivery on top. Do not overbake. Let stand 30 minutes before serving. Serve warm with vanilla ice cream or light cream.

  Sioux berry soup

 
Yield: 4 Servings
 
1 1/2 lb Chuck steak boned/trimmed      3 tb Peanut oil
1 md White onion peeled/sliced      2 c Beef stock (up to 3 cups)
1 c Blackberries      1 tb Honey
 Salt to taste Broil the chuck steak in the oven until brown on both sides. In the old days this would have been done over the fire so you might wish to quickly barbeque the meat in order to increase the flavor. Set the meat aside to cool. In a Dutch oven heat the oil and brown the onions. Cut the meat into bite-size pieces and add to the pot. Add the blackberries and enough beef stock to barely cover the meat. Stir in the honey and simmer the meat covered until it is very tender about 1 hour. If the berries are too tart add more honey to taste. Add salt and serve in bowls. Smith recommends servings this with Bacon Corn Bread and Hominy Baked with Cheese.

 White pizza - authentic italian

 
Yield: 1 Servings
 
4 3/4 c white flour      2 c warm water -- 105 degrees
3 ts dry yeast      1 ts salt
1 TB olive oil
 : ---TOPPING ------ : olive oil : coarse Kosher salt (sea : salt) : dried rosemary Dissolve yeast in the warm water. Add yeast/water mixture to 3 cups of the flour. Mix adding regular salt and olive oil a little at a time. Add the rest of the flour bit by bit until the dough "feels right". Turn dough onto a floured board and knead; adding more flour if necessary to keep the dough from sticking to your fingers. Put the dough in a greased bowl and rotate to distribute the grease all over the dough. Let rise until about double in size (approx. 2 hours). Remove the dough punch down and roll out on the floured board to a thickness of 3/8 to 1/2 inch (make it any shape you desire). Put dough in a pan or cookie sheet. With a pastry brush paint liberally with additional olive oil. Use your thumb and 2 fingers to make dimples over the entire surface. Sprinkle the Kosher sea salt and rosemary over the surface of the dough. Let rise a little more. Bake at 375 degrees F for about 25 minutes. When done paint liberally again with olive oil. Makes 1 white pizza.
